ESU Celebrates Retirement of Dansbury Commons Employee

Ruby Hicks spent over 20 years in Dansbury Commons at East Stroudsburg University of Pennsylvania. Last week, Hicks waved goodbye to her campus family as she celebrated her retirement from ESU’s contracted food service vendor, Aramark.
The campus community joined in Hicks’s celebration at her retirement party on Thursday, March 5. Hicks was greeted with a four-tiered cake, and co-workers and friends grabbed a sharpie and covered her chef coat with their signatures.
“She is the kind of person who everyone wants know but not everyone gets the opportunity to know,” Nancy Weaver, Ph.D., assistant to the vice president of student affairs, said.
Over the years Dansbury Commons adopted Hicks’s recipes, especially on soul food nights, according to Dr. Weaver. “She was a very dedicated, loyal employee and we all wish her the best in the next step of her life,” she said.
